Lemongrass is a perennial grass that grows in clumps. There are about 55 species, most of which are native to South and South-East Asia. In India, it is cultivated as a medical herb and for perfumes, but not used in cooking; in Sri Lanka and throughout South-East Asia it is an important culinary herb.
While the stalk itself is too hard to eat, the soft inner part adds a tangy citron flavour to curries and stir-fries. The new leaves can be chopped and used to flavour dishes, or infused as a tea.
Fresh Lemon Grass has a delicate, floral rose like fragrance mixed with a fresh and grassy aroma.
Lemon Grass has a refreshing lemon-lime taste with a tinge of mint and ginger.
Traditionally, Lemon Grass is used to improve blood circulation and ease muscle pain. It is also used in teas to cure loss of appetite and reduce fever. Lemon Grass is also considered to be a great cleanser as it can detoxify the digestive tract, bladder, kidney, pancreas and the liver. Additionally, this wonder herb can reduce toxins, excess fats, cholesterol while also stimulating lactation and digestion.
Cooking & Food Pairing
Fresh, fragrant and flavoursome, Lemon Grass adds body and a touch of the exotic to meals without overpowering or dominating the flavour profile of a dish. It pairs well with garlic, galangal, shallots, turmeric, ginger, chicken, pork, fish and chilli peppers. Lemon Grass is predominantly used in Thai, Indonesian, Vietnamese and Malaysian soups, curries, stews laksas, rendangs and condiments. Additionally it can be added to many Asian desserts that have rice flour, palm sugar and coconut milk.
