A delicious light salad with a spicy ginger dressing.
Ingredients
- 2 cups snow peas, trimmed
- 2 nashi pears unpeeled (you could use ordinary peeled pears)
- 1/2 head iceberg lettuce
- 120g baby rocket leaves
- 1 small red onion sliced into rings
- Ginger Dressing
- 2 tbsp rice or white wine vinegar
- 1 tbsp light soy sauce
- 1 tsp Gourmet Garden Ginger
- 2 tsp Gourmet Garden Coriander
- 2 tsp honey
Procedure
SERVES 4
- Step 1
- For dressing, place all ingredients in a jar with a screw top lid. Add a pinch of black pepper. Cover and shake to combine.
- Step 2
- Blanch snow peas in boiling water until they turn bright green, but are still crisp. Refresh in cold water and drain.
- Step 3
- Slice pear, core and cut into sticks.
- Step 4
- Combine lettuce, rocket, onion, snow peas and pears in a bowl. Shake dressing and pour over salad. Enjoy! Note: Recipe seen in Recipes Plus Magazine (Summer 2004/2005)
