Coriander, Ginger, Nashi Pear & Snow pea Salad

Ingredients
  • 2 cups snow peas, trimmed
  • 2 nashi pears unpeeled (you could use ordinary peeled pears)
  • 1/2 head iceberg lettuce
  • 120g baby rocket leaves
  • 1 small red onion sliced into rings
  • Ginger Dressing
  • 2 tbsp rice or white wine vinegar
  • 1 tbsp light soy sauce
  • 1 tsp Gourmet Garden Ginger
  • 2 tsp Gourmet Garden Coriander
  • 2 tsp honey
Procedure SERVES 4
Step 1
For dressing, place all ingredients in a jar with a screw top lid. Add a pinch of black pepper. Cover and shake to combine.
Step 2
Blanch snow peas in boiling water until they turn bright green, but are still crisp. Refresh in cold water and drain.
Step 3
Slice pear, core and cut into sticks.
Step 4
Combine lettuce, rocket, onion, snow peas and pears in a bowl. Shake dressing and pour over salad. Enjoy! Note: Recipe seen in Recipes Plus Magazine (Summer 2004/2005)
