Bacon and Tomato Frittata with Basil, Mint and Parsley
Bacon and Tomato Frittata

This delicious frittata is great cold for lunch or hot for dinner.

Ingredients

  • 8 eggs

  • ½ cup reduced-fat milk

  • 1 tbsp Gourmet Garden Parsley
    Add to Shopping List
  • 1 tbsp Gourmet Garden Basil
    Add to Shopping List
  • 2 tsp Gourmet Garden Mint

  • Salt & Pepper

  • 15g bacon, chopped
    Add to Shopping List
  • 1 thinly sliced onion
    Add to Shopping List
  • 200g orange sweet potato, finely diced
    Add to Shopping List
  • 1/3 cup grated parmesan
    Add to Shopping List
  • 1 tomato, thinly sliced
    Add to Shopping List
  • Salad greens to serve

Procedure SERVES 4

Step 1
Whisk eggs and reduced- fat milk in a large bowl. Add Gourmet Garden Parsley, Basil and Mint. Season with salt and pepper. Whisk to combine.

Step 2
Heat a 20cm (base) non-stick (ovenproof) frying pan. Add bacon, onion and orange sweet potato. Cook for 5 to 7 minutes or until tender.

Step 3
Add egg mixture. Cook over low heat until almost set. Sprinkle with grated parmesan. Arrange sliced tomato over egg mixture.

Step 4
Place under preheated grill. Cook for 5 minutes or until frittata is cooked through. Stand frittata in pan for 5 minutes before cutting into wedges. Serve with salad greens.
