Baked Fish with Italian Herbs
Baked Fish and Italian Herbs

Perfect for a weeknight dinner with friends. Recipe by TV chef, Dominique Rizzo.

Ingredients

  • 2 zucchinis, cut into wedges

  • 2 red onions, cut into wedges

  • 10 cherry tomatoes

  • 1/4 cup pitted black olives

  • 1/4 cup (60ml) olive oil

  • 4 x 180g thick skinless white fish fillets

  • 2 tbls Gourmet Garden Garlic

  • 1 tbls Gourmet Garden Italian Herbs
    Add to Shopping List
  • Lemon juice & zest of one lemon
    Add to Shopping List
  • 1 tbs Dijon mustard
    Add to Shopping List
  • 2 tbls Gourmet Garden Parsley
    Add to Shopping List
  • ½ tbls Gourmet Garden Garlic
    Add to Shopping List
  • 3 tbls Olive oil
    Add to Shopping List
Procedure SERVES 4

Step 1
Preheat the oven to 200°C.

Step 2
Whisk olive oil,Gourmet Garden Garlic and Gourmet Garden Italian herbs in bowl. Toss herbed oil through zucchini, onions, cherry tomatoes and black olives. Place into a baking dish and bake for 10 minutes.

Step 3
Remove vegetables from oven and place fish fillets into baking dish. Brush another tablespoon of herbed oil over the fish. Place back into oven and bake for a further 20  minutes until cooked through.

Step 4
Whisk together Gourmet Garden Parsley, Gourmet Garden Garlic, Dijon mustard, olive oil and the zest and juice from one lemon. Once cooked, drizzle the fish with the herb dressing and serve with side salad.

What do I do with the vegies: place them on top of the fish & into the oven or add them when serving

This is a very tasty easy recipe. For a vegetarian version substitute fish with tofu or paneer. Yum.
