Basil Pesto and Avocado & Coriander Dips

A great afternoon snack that the kids will love. Recipe by 4 Ingredients author, Kim McCosker.

Ingredients

  • 2 tbsp Gourmet Garden Basil
    Add to Shopping List
  • 2 tbsp  Gourmet Garden Garlic
    Add to Shopping List
  • 75g parmesan cheese, grated
    Add to Shopping List
  • ¼ cup extra virgin olive oil
    Add to Shopping List
  • ½ cup pinenuts
    Add to Shopping List
  • 2 avocados, mashed
    Add to Shopping List
  • 1 vine ripened tomato, diced
    Add to Shopping List
  • 1 tbls lemon juice
    Add to Shopping List
  • 1 tbsp Gourmet Garden Coriander
    Add to Shopping List
  • 4 pita bread/tortillas
    Add to Shopping List
  • 2 tbs. extra virgin olive oil
    Add to Shopping List
  • 1 tbsp Gourmet Garden Garlic
    Add to Shopping List
Procedure SERVES 4

Basil Pesto Dip
Blend Gourmet Garden Basil, Gourmet Garden Garlic, parmesan cheese, pinenuts and olive oil together in food processor.

Avocado & Coriander Dip
Mix avocados with tomato, lemon or lime juice and Gourmet Garden Coriander.

Homemade Corn Chips
Preheat oven to 180C. Cut pita bread or tortillas into triangles. Mix together oil and Gourmet Garden Garlic and brush onto tortillas.  Pop onto a non-stick baking tray and bake for 6 – 8 minutes or until crispy.

Serve dips with corn chips and carrot sticks.
