Chicken, Mushroom and Parsley Risotto

Risotto doesn't have to be time consuming with this quick and tasty dish.

Ingredients

  • 2 tbsp olive oil

  • 500g cubed chicken

  • 1 diced onion
    Add to Shopping List
  • 2 cups arborio rice
    Add to Shopping List
  • 4 cups chicken stock
    Add to Shopping List
  • 250g mushrooms
    Add to Shopping List
  • 1 punnet halved cherry tomatoes
    Add to Shopping List
  • 1 sliced zucchini
    Add to Shopping List
  • 1 tbsp Gourmet Garden Parsley
    Add to Shopping List
Procedure SERVES 4

Step 1
Heat olive oil in a large pan. Sauté cubed chicken & diced onion for 4-5 minutes.
Step 2
Stir in arborio rice. Add chicken stock stirring til creamy and tender.
Step 3
Sauté mushrooms, cherry tomatoes & zucchini in a little olive oil.
Step 4
Stir into risotto with Gourmet Garden Parsley. Serve with shredded parmesan. Enjoy!

VERY GOOD AND FILLING HAD TO DO IT WITHOUT MUSHROOMS THOUGH FAM DON'T CARE FOR THEM YUCK!
