Chicken and Basil Pasta Salad

Great for a summer night or light lunch, this salad can be whipped up in minutes

Ingredients

  • 375g spiral pasta

  • 400g thinly sliced cooked chicken

  • 250g halved cherry tomatoes
    Add to Shopping List
  • 1 thinly sliced red onion
    Add to Shopping List
  • 30g baby rocket
    Add to Shopping List
  • 1/3 cup roasted chopped hazelnuts
    Add to Shopping List
  • 1/2 cup mayonaise
    Add to Shopping List
  • 1/4 cut extra light sour cream
    Add to Shopping List
  • 2-3 tbsp water
    Add to Shopping List
  • 2 tbsp lemon juice
    Add to Shopping List
  • 1 tbsp Gourmet Garden Garlic
    Add to Shopping List
  • 1 tbsp Gourmet Garden Basil
    Add to Shopping List
  • 2 tsp Gourmet Garden Chilli
    Add to Shopping List
  • Salt & pepper to season
    Add to Shopping List
Procedure SERVES 4

Step 1
Cook pasta following packet directions until tender. Drain. Refresh under cold water. Place pasta in a large bowl.  

 

Step 2
Add thinly sliced cooked chicken, halved cherry tomatoes, thinly sliced red onion, baby rocket and 1roasted chopped hazelnuts to pasta.

Step 3
Combine mayonnaise, extra light sour cream, water, lemon juice, Gourmet Garden Garlic, Basil and Chilli in a bowl.

 

Step 4
Add dressing to pasta mixture. Season with salt and pepper. Toss gently to combine.

Fantastic salad - great as a meal or as a side salad. Made it for New Years and my guests LOVED it!
