Lamb Racks with Spicy Vegetables

A great twist on meat and three vegetables

Ingredients

  • 1 tbsp Gourmet Garden Rosemary

  • 2 tsp wholegrain mustard

  • 4 x 3 cutlet lamb racks
    Add to Shopping List
  • 250g orange sweet potato, peeled and chopped
    Add to Shopping List
  • 2 desiree potatoes, chopped
    Add to Shopping List
  • 1 small red onion, cut into thin wedges

  • 1 tbsp olive oil
    Add to Shopping List
  • 4 tsp Gourmet Garden Garlic
    Add to Shopping List
  • 4 tsp Gourmet Garden Chilli
    Add to Shopping List
  • 2 zucchini, chopped
    Add to Shopping List
  • 1 red capsicum, chopped
    Add to Shopping List
Procedure SERVES 4

Step 1
Preheat oven to 240°C/220°C fan-forced. Combine Gourmet Garden Rosemary with wholegrain mustard. Brush lamb racks with rosemary mixture. Set aside until required.

Step 2
Place orange sweet potato, desiree potatoes and onion in a baking dish.

Step 3
Add olive oil, 2 tsp Gourmet Garden Garlic and 2 tsp Gourmet Garden Chilli. Toss to combine. Bake for 20 minutes or until almost tender.

Step 4
Meanwhile, toss zucchini, red capsicum with 2 tsp Gourmet Garden Garlic and 1 tsp Gourmet Garden Chilli. Add to baking pan with lamb for the last 15 minutes of cooking time.

This recipe looks most inviting. I assume that the racks of lamb are put in the oven at step 2.
