Great for a mid-week BBQ or grill.
- 1 tbsp Gourmet Garden Garlic
- 1 tbsp Gourmet Garden Parsley
- 1 tbsp Gourmet Garden Chilli (available in Hot or Mild)
- 1 tbsp olive oil
- 400g diced chicken thigh fillets
- 1 trimmed corn cob
- 1/2 green capsicum, diced
- 1/2 red onion, diced
- 1 tomato, diced
- 1 tbsp lime juice
- 2 tsp oil
Step 1
Mix Gourmet Garden Garlic, Parsley and Chilli together with olive oil in a large bowl. Toss through diced chicken until well coated.
Step 2
Thread chicken onto 4 wooden or metal skewers. Cook chicken on heated oiled BBQ until cooked through.
Step 3
Meanwhile; grill 1 trimmed corn cob on BBQ until kernals are cooked. Slice kernals from cob. Combine in a bowl with green capsicum, red onion, tomato, lime juice and oil.
Step 4
Serve skewers with corn salsa and char grilled bread.
