A fresh and delicious pasta using prosciutto, vegetables and Mediterranean Seasoning.
- 375g penne pasta
- 6 slices prosciutto
- 2 tbsp olive oil
- 2 tbsp Gourmet Garden Mediterranean Seasoning
- 100g semi-dried tomatoes, chopped
- 100g baby rocket
- 100g roasted yellow capsicum, thinly sliced
- 100g feta cheese, crumbled to serve if desired
Step 1
Preheat grill to high. Place prosciutto on a baking tray. Grill for 4 – 5 minutes or until crisp. Set aside to cool. Break into pieces.
Step 2
Meanwhile, Cook penne pasta in a large saucepan of boiling salted water following packet directions until tender. Drain. Return to pan.
Step 3
Add olive oil and Gourmet Garden Mediterranean Seasoning. Toss to coat. Add semi-dried tomatoes, baby rocket, prosciutto and roasted yellow capsicum to pasta. Toss to combine. Serve topped with crumbled feta if desired.
