Mediterranean Pasta

A fresh and delicious pasta using prosciutto, vegetables and Mediterranean Seasoning.

Ingredients

  • 375g penne pasta

  • 6 slices prosciutto
    Add to Shopping List
  • 2 tbsp olive oil
    Add to Shopping List
  • 2 tbsp Gourmet Garden Mediterranean Seasoning
    Add to Shopping List
  • 100g semi-dried tomatoes, chopped
    Add to Shopping List
  • 100g baby rocket
    Add to Shopping List
  • 100g roasted yellow capsicum, thinly sliced
    Add to Shopping List
  • 100g feta cheese, crumbled to serve if desired

Procedure SERVES 4

Step 1
Preheat grill to high. Place prosciutto on a baking tray. Grill for 4 – 5 minutes or until crisp. Set aside to cool. Break into pieces.

Step 2
Meanwhile, Cook penne pasta in a large saucepan of boiling salted water following packet directions until tender. Drain. Return to pan.

Step 3
Add olive oil and Gourmet Garden Mediterranean Seasoning. Toss to coat. Add semi-dried tomatoes, baby rocket, prosciutto and roasted yellow capsicum to pasta. Toss to combine. Serve topped with crumbled feta if desired.

I love, love, love this recipe. I often add kalamata olives and use fresh cherry tomatoes instead.

We love this recipe we add a bag of baby spinche & roasted pine nuts in place of feta
