An easy and delicious pasta salad infused with the flavours of Italy - perfect for 'date night'! Recipe by TV chef, Dominique Rizzo.
- 375g penne pasta
- 2 tbsp olive oil
- 2 tbsp Gourmet Garden Basil
- 1 tbsp Gourmet Garden Oregano
- 100g Cherry tomatoes
- 60g Black pitted olives
- 2 chopped Spring onion (shallots)
- 100g baby rocket
- 100g roasted yellow capsicum, thinly sliced
- 30g Sundried tomatoes
- 1 tbls tomato paste
- 1 ½ tbls white wine vinegar
- 1 tbls Gourmet Garden Garlic
- ¼ cup Olive oil
Step 1
Boil penne pasta in a large saucepan of boiling salted water following packet directions al dente. Drain, cool and place in large bowl.
Step 2
Add olive oil, Gourmet Garden Basil and Gourmet Garden Oregano to cooled pasta. Toss to coat.
Step 3
Add cherry tomatoes, spring onions, baby rocket, capsicum & olives. Toss to combine.
Step 4
For dressing, whisk together sundried tomatoes, tomato paste, white wine vinegar, olive oil and Gourmet Garden Garlic. Toss through salad and serve.
