A delicious recipe by Australian chef, Dominique Rizzo.
- 600 g flour
- 8 tbsp. extra flour (for sprinkling)
- 50g butter
- 95ml olive oil
- 2 eggs
- 2 cups water
- salt
- 400g mixed seafood or seafood marinara mix - chopped into small pieces and par cooked in boiling with ½ a lemon, drain and refresh in cold water and set aside
- 2 tbsp olive oil
- 1 dsp butter
- 2 onions finely diced
- 1 tsp Gourmet Garden Garlic
- 1 tsp Gourmet garden Chilli
- 2 tbsp tomato paste
- 2 tblsp Gourmet Garden Moroccan Seasoning
- ¼ cup finely chopped parsley
- Juice of ½ lemon
Step 1
In a saucepan, heat the water, salt, butter and oil. Once it
boils, take from the stove and add all the flour at once, mixing
vigorously with a wooden spoon, then add the egg and mix in.
Step 2
Take the dough from the pan and knead on a work surface sprinkled with
flour, adding more flour as necessary. Make the dough into a ball,
cover with a clean cloth and leave for half an hour.
Step 3
Meanwhile heat the olive oil and butter in a heavy based pan over moderate heat and add in the diced onions, Gourmet Garden Garlic and Chilli and sweat until softened and transparent, add in Gourmet Garden Moroccan Seasoning and tomato paste. Add in the seafood and the chopped parsley. Adjust the seasoning and stir in the lemon juice.
Step 4
When the dough is ready, roll out thinly on the work surface to form 12 cm circles . Place one spoonful of the filling in the middle of each circle, fold over both the sides and then both the ends to form a small parcel. Brush with egg wash and bake in a hot oven of 180c until golden, approximately 20 – 30 minutes.
