Orange and Ginger Glazed Sweet Potato

A tasty glaze to spice up yams or sweet potato.

Ingredients

  • 1.8kg medium sweet potatoes

  • 1 cup packed brown sugar
    Add to Shopping List
  • 1/3 cup strained fresh orange juice
    Add to Shopping List
  • 1 tbsp Gourmet Garden Ginger
    Add to Shopping List
  • 30g butter
    Add to Shopping List
Procedure SERVES 4

Step 1
Cook potatoes in a large saucepan of boiling water, covered, until just tender when pierced, about 30 minutes. Drain, cool and remove skins.
Step 2
Cut potatoes into chunks or slices and arrange in a buttered baking dish.
Step 3
In a saucepan, combine brown sugar, orange juice, Gourmet Garden Ginger and butter. Bring to a boil over moderate heat, stirring until sugar dissolves. Reduce heat and simmer 5 minutes more or until clear. Pour glaze
Step 4
Bake in a preheated 180C oven, basting potatoes frequently with the syrup, until tender and well-glazed. Enjoy!
