A tasty glaze to spice up yams or sweet potato.
Ingredients
- 1.8kg medium sweet potatoes
- 1 cup packed brown sugar
- 1/3 cup strained fresh orange juice
- 1 tbsp Gourmet Garden Ginger
- 30g butter
Procedure
SERVES 4
- Step 1
- Cook potatoes in a large saucepan of boiling water, covered, until just tender when pierced, about 30 minutes. Drain, cool and remove skins.
- Step 2
- Cut potatoes into chunks or slices and arrange in a buttered baking dish.
- Step 3
- In a saucepan, combine brown sugar, orange juice, Gourmet Garden Ginger and butter. Bring to a boil over moderate heat, stirring until sugar dissolves. Reduce heat and simmer 5 minutes more or until clear. Pour glaze
- Step 4
- Bake in a preheated 180C oven, basting potatoes frequently with the syrup, until tender and well-glazed. Enjoy!
