A fresh mix of flavours combined, create this nutritious salad.
- 450g brown or white rice
- 310g can corn kernels, drained
- 250g cherry tomatoes, quartered
- 50g baby spinach
- 3 shallots
- 425g can tuna in springwater, drained, flaked
- 100g Danish feta, cubed
- ¼ cup olive oil
- 1 Tbsp. lemon juice
- 1 Tbsp. Gourmet Garden Garlic
- 1 Tbsp. Gourmet Garden Chives
Step 1
Prepare rice following packet directions. Set aside for 5 minutes to cool.
Step 2
Add corn, tomato, tuna, spinach, shallots and feta to rice. Season with salt and pepper.
Step 3
For dressing whisk olive oil, lemon juice, Gourmet Garden Garlic and Gourmet Garden Chives in a small bowl.
Step 4
Pour dressing over salad and toss to combine.
