Indian Chicken with Garlic & Coriander

Ingredients
650 g chicken breast, butterflied
1 tsp curry powder
1 tsp Garlic Stir-In Paste , or freshly chopped garlic
1 tsp Ginger Stir-In Paste , or freshly chopped ginger
1/2 lemon, zested and juiced
1 tsp tomato paste
300 g Greek yoghurt
1/2 tsp Lightly Dried Coriander
1 small Onion, chopped
Method

Pre-heat oven to 220°C.

Place all ingredients into a bowl and mix until the chicken is well coated in all the spices.

Bake in an oven proof dish for approximately 25 minutes, or until the chicken has cooked through.

Serve with extra yoghurt and a cucumber and tomato salad.
