Spicy Turkey Sausage Chili with Cilantro

Ingredients
1 Tbsp olive oil
1 large chopped onion
1 Red Pepper, stemmed & chopped
1 lb. Italian Turkey sausage, cut into chunks
4 oz. Sliced Mushrooms
2 Tbsp Garlic Stir-In Paste
2 (15 oz) cans low sodium black beans, drained
1 (14.5 oz) can no salt diced tomatoes, undrained
2 tbsp Lightly Dried Chili Pepper
3 tbsp Lightly Dried Cilantro
1 tsp ground cumin
Method

Heat oil, add onions and red pepper, cook 5 minutes.  Add sausage and mushrooms, cook about 5 minutes (until lightly browned).

Add Gourmet Garden Garlic Stir-In Paste, beans, tomatoes, Gourmet Garden Lightly Dried Chili Pepper and Lightly Dried Cilantro; heat to boil.  Reduce heat to low. Simmer until vegetables are tender about 20-25 minutes.  Serve topped with green onions and fat-free Greek yogurt, if desired.
