Tod Man Khao Pod (Corn Fritters)

Serves 12
Ingredients
2 cups sweet corn kernals, fresh or frozen
45 grams plain flour
25 grams cornflour
2 tablespoons Thai Stir-In Seasoning
1/2 pouch Lightly Dried Southeast Asian
2 eggs, seperated
3 Kaffir lime leaves, Finely shredded
Method

If using fresh corn, slice kernels from the cobs. Set aside.

Whisk together the Plain flour and cornflour.

Separate eggs. Whip egg whites to soft peak.

In a separate bowl, lightly beat yolks.

Add Thai Seasoning, & South East Asian Seasoning to egg yolks, and mix together. Add corn.

Pour egg/corn mixture onto flour, and mix together. Stir-in kaffir lime leaves.

Gently fold through whisked egg whites until just combined.

Shallow fry, on medium heat until golden brown, turning once.
