Zucchini and Lemon Spaghetti with Lightly Dried Chilli

Serves 4
30 minutes
Ingredients
400 g spaghetti or pasta of your choice
1 onion, diced
1 tbsp Garlic Stir-In Paste
1 tbsp
2 zucchini, grated
1 lemon, Rind and juice
Parmesan cheese, to serve
Method

Grate zucchini and zest lemon.

Saute oil and onion in frypan for 1 minute. Add garlic and chilli and saute for a further 1 minute.

Add zucchini, zest and lemon juice and saute for 3 minutes until zucchini has softened.

Boil pasta until al dente. Drain and stir into pan. Serve topped with parmesan cheese.
