Spinach & Mushroom Fettuccine
Spinach and Mushroom Fettuccine with Garlic, Chilli & Parsley

Ingredients
  •  350g fettuccine
  • 1 tbsp olive oil
  • 500g assorted mushrooms
  • 2 tsp Gourmet Garden Garlic
  • 2 tsp Gourmet Garden Chilli
  • 500ml light thickened cream
  • 150g baby spinach leaves
  • 125g chargrilled red capsicum
  • 1 tbsp Gourmet Garden Parsley
  • Finely grated parmesan to serve
  • Salt & pepper to taste
Procedure SERVES 4

Step 1
Cook pasta following packet directions until tender. Drain. Return to pan.


Step 2
Heat 1 tbsp olive oil in a large, deep frying pan. Add mushrooms, Gourmet Garden Garlic and Chilli. Cook until tender.


Step 3
Add cream to mushrooms. Simmer for 5 minutes or until slightly thickened. Add baby spinach leaves, char grilled red capsicum and Gourmet Garden Parsley.


Step 4
Toss pasta through sauce. Season with salt and pepper and serve topped with finely grated parmesan if desired.
