Lamb and Yoghurt Curry

This delicious lamb curry can be prepared in minutes using Gourmet Garden Fresh Blends Indian

Ingredients

  • 1 tbsp butter

  • 1 sliced onion

  • 400g diced lamb

  • 2 tbsp Gourmet Garden Fresh Blends Indian
    Add to Shopping List
  • 1 tbsp Gourmet Garden Chilli
    Add to Shopping List
  • 1 tsp cumin
    Add to Shopping List
  • 1/3 cup chicken stock
    Add to Shopping List
  • 1 cup yoghurt
    Add to Shopping List
  • 50g baby spinach
    Add to Shopping List
  • 1 tbsp Gourmet Garden Coriander
    Add to Shopping List
  • Sliced spring onion and steamed rice to serve

Procedure SERVES 4

Step 1
Melt butter in a medium saucepan, cook onion and lamb until onion softens and lamb is browned.

Step 2
Stir in Gourmet Garden Fresh Blends Indian,  Gourmet Garden Chilli , cumin, chicken stock and yoghurt. Simmer, covered, 40 minutes or until lamb is tender.

Step 3
Stir in baby spinach and Gourmet Garden Coriander. Cook until spinach wilts. Remove from heat.

Step 4
Serve lamb curry with sliced spring onion and steamed rice.
