Pan-Fried Dill & Garlic Barramundi with Steamed Vegetables
Ingredients

  • 4 barramundi fillets, boned & skinned

  • 2 tsp Gourmet Garden Dill
    Add to Shopping List
  • 1 tbsp Gourmet Garden Garlic
    Add to Shopping List
  • 1 tbsp Gourmet Garden Parsley
    Add to Shopping List
  • 1 tbsp olive oil
    Add to Shopping List
  • 1 bunch broccolini
    Add to Shopping List
  • 1 bunch asparagus
    Add to Shopping List
  • 125g butter beans
    Add to Shopping List
  • 1 red capsicum, thinly sliced
    Add to Shopping List
  • 2 tsp extra virgin olive oil
    Add to Shopping List
  • 1 tbsp lemon juice
    Add to Shopping List
  • Salt and pepper to season
    Add to Shopping List
  • Lime or lemon wedges to serve

Procedure SERVES 4

Step 1
Place barramundi fillets on a plate. Combine Gourmet Garden Dill, Garlic and Parsley in a bowl. Brush herb mixture over one side of fish.

Step 2
Heat olive oil in a large frying pan. Cook fish herb side down for 2 minutes. Turn, cook for 2 to 3 minutes or until just cooked through.

Step 3
Meanwhile, boil or steam broccolini, asparagus, butter beans and red capsicum. Toss vegetables in extra virgin olive oil and lemon juice. Season with salt and pepper.

Step 4
Divide vegetables among serving plates. Top with fish. Serve with lime or lemon wedges.

yum yum yum, what more can I say, this recipe is absolutely delicious
