Prawn, Ginger, Coriander & Rice Noodle Salad
Ingredients

  • 1 bunch watercress, trimmed

  • 150 g thin rice noodles

  • 600 g cooked prawns, peeled

  • 1 tsp green curry paste
    Add to Shopping List
  • 1 tbsp Gourmet Garden Coriander
    Add to Shopping List
  • 2 tsp Gourmet Garden Ginger
    Add to Shopping List
  • 1 tsp fish sauce
    Add to Shopping List
  • 2 tbsp lime juice
    Add to Shopping List
  • 3 green onions, sliced thinly
    Add to Shopping List
Procedure SERVES 4

Step 1
Wash the watercress, shake dry and strip off the leaves.
Step 2
Cook the rice noodles according to the instructions on the packet. Drain. Refresh in cold water. Cut noodles into shorter lengths.
Step 3
Mix the curry paste with 1 tbsp of the noodle water in a medium bowl. Stir in Gourmet Garden Coriander and Ginger, fish sauce and lime juice. Combine noodles and prawns with dressing, toss gently to combine.
Step 4
Place watercress, green onions and noodle mixture into a serving bowl, toss gently to combine. Serve.
