Ingredients
- 1 bunch watercress, trimmed
- 150 g thin rice noodles
- 600 g cooked prawns, peeled
- 1 tsp green curry paste
- 1 tbsp Gourmet Garden Coriander
- 2 tsp Gourmet Garden Ginger
- 1 tsp fish sauce
- 2 tbsp lime juice
- 3 green onions, sliced thinly
Procedure
SERVES 4
- Step 1
- Wash the watercress, shake dry and strip off the leaves.
- Step 2
- Cook the rice noodles according to the instructions on the packet. Drain. Refresh in cold water. Cut noodles into shorter lengths.
- Step 3
- Mix the curry paste with 1 tbsp of the noodle water in a medium bowl. Stir in Gourmet Garden Coriander and Ginger, fish sauce and lime juice. Combine noodles and prawns with dressing, toss gently to combine.
- Step 4
- Place watercress, green onions and noodle mixture into a serving bowl, toss gently to combine. Serve.
