- 750 grams smoked chicken, without skin
- 2-3 stalks celery, finely sliced
- 2-3 spring onions, trimmed and sliced
- 1 small red capsicum, finely sliced
- 2 tablespoons Gourmet Garden Basil
- 2 tablespoons Gourmet Garden Parsley
- 1 teaspoon Gourmet Garden Garlic
- grated rind and juice 1 lemon
- ¼ cup virgin olive oil
- 300-400 grams of your favourite small-medium size pasta shapes
- 2 cups well-packed baby rocket leaves
Step 1
Finely slice the smoked chicken into a bowl.
Step 2
Toss in the celery, spring onion, capsicum, Gourmet Garden Basil, Gourmet Garden Parsley, Gourmet Garden Garlic, lemon rind and juice and olive oil. Season well with black pepper, cover and set aside while cooking the pasta.
Step 3
Cook the pasta in plenty of boiling salted water for 10-12 minutes or until tender. Drain well leaving about ¼ cup of the cooking water in with the pasta.
Step 4
Toss in the smoked chicken and allow to cool for 10 minutes. Just prior to serving, mix the rocket leaves through gently and serve in a shallow bowls.
