BBQ Lamb Pizza
Ingredients

  • 3 Tbsp oil

  • 2 Tbsp Gourmet Garden Basil

  • 1 tsp Gourmet Garden Garlic 
    Add to Shopping List
  • 300g lean lamb leg steaks, finely sliced 
    Add to Shopping List
  • 2 zucchini, thickly sliced lengthwise
    Add to Shopping List
  •  1 capsicum, finely sliced 
    Add to Shopping List
  • 2 medium-sized pizza bases 
    Add to Shopping List
  • 1/2 cup tomato puree 
    Add to Shopping List
  • 100g feta cheese, crumbled
    Add to Shopping List
Procedure SERVES 4

Step 1
Mix together oil, Gourmet Garden Basil and Gourmet Garden Garlic in a small bowl to make herb oil.

Step 2
Drizzle 2 tsp herb oil over sliced lamb toss to coat. Brush vegetables with herb oil keeping back a teaspoon for the pizza bases.

Step 3
Preheat the BBQ plate to medium-high heat, cook the lamb and vegetables until golden and just tender. Set aside and keep warm.

Step 4
Brush one side of each pizza with herb oil and place oil-side down on a moderately hot BBQ plate for 3 minutes or until the base is beginning to brown. Brush the top of the pizza base with remaining herb oil and turn over.

Step 5
Spread pizzas with tomato puree. Scatter over warm lamb and vegetables, top with feta cheese.

Step 6
Cover with the BBQ hood and cook over low - moderate heat for 5 minutes or until the base is crispy and topping hot. Serve immediately with mixed green salad leaves.

Yummy - this pizza recipe was delicious but low in fat which is a bonus!
