Coriander Rice Paper Rolls
Ingredients

  • 50g (1.8oz) Chinese vermicelli noodles

  • 1 tbsp soy sauce

  • 1 tsp fish sauce (optional)

  • 2 tsp Gourmet Garden Coriander
    Add to Shopping List
  • 1/2 tsp Gourmet Garden Lemon Grass

  • 1/2 tsp Gourmet Garden Garlic

  • 16 rice paper wrappers

  • 250g (9oz) cooked prawns, shelled, deveined a

Procedure SERVES 16

Step 1
Place noodles in a bowl. Cover with warm water. Allow to stand until softened. Drain well.
Step 2
Mix together sauces and Gourmet Garden Herbs. Toss through noodles. Set aside.
Step 3
Working with one wrapper at a time, place in a bowl of warm water. Soak for 1 to 2 minutes or until softened.
Step 4
Transfer to a board covered with a tea towel (to absorb any excess water). Top with about 3 prawn slices, a portion of noodle mixture and some sprouts.
Step 5
Fold sides in over filling. Roll up as a Swiss roll. Place on serving plate. Continue with remaining wrappers and filling.
Step 6
To prepare dipping sauce: Combine sauce and Gourmet Garden Chilli. Serve with rolls. If you prepare these ahead, cover with plastic wrap and keep refrigerated until required. Note: Cooked chicken
