Ingredients
- 4 firm white fish fillets (approximately 100g weight each)
- 2 cups fresh breadcrumbs
- zest from one small lemon (approximately 2 tsp)
- 1 tsp Gourmet Garden Chilli
- 2 tbsp Gourmet Garden Parsley
- 2 tbsp fresh Dill
- 1 tbsp oil
- Sea salt and cracked black pepper to taste
Procedure
SERVES 4
- Step 1
- Preheat oven to 200C (400F).
- Step 2
- Combine breadcrumbs, Gourmet Garden Chilli and Parsley, fresh Dill, salt, pepper and oil.
- Step 3
- Place fish fillets on tray lined with baking paper and press herbed crumbs on top. Bake for 12-15 minutes until fish is just cooked.
- Step 4
- Serve with lemon wedges and a green salad or steamed vegetables.
