Ingredients

  • 8 chat potatoes

  • 4 peeled red onions

  • 1 peeled and sliced sweet potato
    Add to Shopping List
  • 1/4 cup olive oil
    Add to Shopping List
  • 1 tbsp. Gourmet Garden Garlic
    Add to Shopping List
  • 1 seeded and quartered bell pepper
    Add to Shopping List
  • 4 cap mushrooms
    Add to Shopping List
  • 2 halved corguettes
    Add to Shopping List
  • 2 baby aubergines
    Add to Shopping List
  • 1/2 cup cherry/cocktail tomatoes
    Add to Shopping List
  • kalamata olives (optional)
    Add to Shopping List
Procedure SERVES 4

Step 1
Arrange chat potatoes, onions and sweet potato in a baking dish.

Step 2
Combine olive oil with Gourmet Garden Garlic. Drizzle over vegetables. Bake at 180C for 30 minutes.

Step 3
Add bell peppers, mushrooms, corguettes, aubergines and tomatoes to cooked vegetables in baking dish. Toss well.

Step 4
Bake for further 30 minutes. Sprinkle with olives (optional). Serve with barbecued grilled or roast meat, chicken or fish of choice.
