Ingredients
- 8 chat potatoes
- 4 peeled red onions
- 1 peeled and sliced sweet potato
- 1/4 cup olive oil
- 1 tbsp. Gourmet Garden Garlic
- 1 seeded and quartered bell pepper
- 4 cap mushrooms
- 2 halved corguettes
- 2 baby aubergines
- 1/2 cup cherry/cocktail tomatoes
- kalamata olives (optional)
Procedure
SERVES 4
- Step 1
- Arrange chat potatoes, onions and sweet potato in a baking dish.
- Step 2
- Combine olive oil with Gourmet Garden Garlic. Drizzle over vegetables. Bake at 180C for 30 minutes.
- Step 3
- Add bell peppers, mushrooms, corguettes, aubergines and tomatoes to cooked vegetables in baking dish. Toss well.
- Step 4
- Bake for further 30 minutes. Sprinkle with olives (optional). Serve with barbecued grilled or roast meat, chicken or fish of choice.
