Salmon with Basil Vinagarette
Ingredients

  • 30g butter

  • 2 trimmed bunches English spinach
    Add to Shopping List
  • 4 salmon cutlets
    Add to Shopping List
  • 1/4 cup olive oil
    Add to Shopping List
  • 2 tbsp. white wine vinegar
    Add to Shopping List
  • 2 tbsp. Gourmet Garden Basil
    Add to Shopping List
Procedure SERVES 4

Step 1
Melt butter in a frying pan on high. Toss in spinach for 2-3 minutes until wilted.

Step 2
Spray a char-grill with oil. Preheat on medium. Cook salmon cutlets for 2-3 minutes each side until cooked to taste.

Step 3
Meanwhile, in a jug whisk olive oil, vinegar and Gourmet Garden Basil and season to taste.

Step 4
Serve salmon on a bed of spinach, drizzled with basil vinaigrette. Accompany with mash potato.
