Ingredients
- 30g butter
- 2 trimmed bunches English spinach
- 4 salmon cutlets
- 1/4 cup olive oil
- 2 tbsp. white wine vinegar
- 2 tbsp. Gourmet Garden Basil
Procedure
SERVES 4
- Step 1
- Melt butter in a frying pan on high. Toss in spinach for 2-3 minutes until wilted.
- Step 2
- Spray a char-grill with oil. Preheat on medium. Cook salmon cutlets for 2-3 minutes each side until cooked to taste.
- Step 3
- Meanwhile, in a jug whisk olive oil, vinegar and Gourmet Garden Basil and season to taste.
- Step 4
- Serve salmon on a bed of spinach, drizzled with basil vinaigrette. Accompany with mash potato.
