Perfect for a quick snack or lunch on the run, this delicious pizza combines the delicious flavours of garlic & basil with squash & feta.
- 500g butternut squash
- 2 tbsp olive oil
- 1 tbsp water
- 1 tbsp Gourmet Garden Garlic
- 2 tbsp Gourmet Garden Basil
- 2 turkish bread rounds, halved or 2 round thin pizza bases
- ½ cup reduced-fat mozzarella cheese
- 15g feta, crumbled
- 1 bunch asparagus, trimmed and cut into 6cm lengths
- 40g baby rocket leaves
Step 1
Preheat the oven to 220°C/200°C fan-forced. Peel and cut butternut squash into 1.5cm squares. Bake for 15 minutes or until almost tender.
Step 2
Meanwhile, combine olive oil, water, Gourmet Garden Garlic and Basil in a bowl. Cut 2 turkish bread rounds in half or use 2 round thin pizza bases. Spread cut-sides with herb mixture.
Step 3
Top Turkish bread halves with mozzarella cheese, squash, feta and asparagus, cut into 6cm lengths.
Step 4
Bake for 10 to 12 minutes or until base is crisp. Remove from oven. Top with baby rocket leaves. Serve.
