Chicken & Basil Pesto Fettuccine

Ingredients
  • Juice of 1 lemon
  • 2 tbsp. pine nuts
  • ¼ cup parmesan cheese
  • 1 package Gourmet Garden Italian (Garlic, Basil, Parsley)
  • 1/3 cup olive oil
  • 1lb boneless, skinless chicken breast, cubed
  • 1lb pasta
Method SERVES 4

Step 1:
Combine lemon juice, pine nuts, parmesan cheese, one package or 2 tbsp. each of Gourmet Garden Garlic, Basil and Parsley in a food processor and blend until roughly chopped. With motor running add olive oil to combine blend.

Step 2:
Pan fry chicken breast cubed in olive oil and set aside

Step 3:
Prepare pasta per package directions, drain.

Step 4:
Combine chicken, pesto and pasta. Mix well and top with parmesan cheese.
