Gluten free
- 6 slices bacon, cut into ½ inch pieces
- 1 tsp. olive oil
- ½ red onion, diced (about 1 cup)
- 2 tsp. Gourmet Garden Garlic
- 5 large eggs
- 5 egg whites
- 2 tbsp. gluten free, rice or garbanzo bean flour
- 1 tbsp. Gourmet Garden Dill
- 1 tsp. Gourmet Garden Chili Pepper
- 1 cup shredded mozzarella cheese
- 2 cups baby spinach, cooked and chopped
Step 1
Cook bacon in a large skillet over medium heat 8-10 minutes or until browned. Remove from skillet, drain on paper towels. Wipe out skillet.
Step 2
Add the oil and onion and cook for 5 minutes until softened, then add Gourmet Garden Garlic and cook 1 minute. Transfer to large bowl.
Step 3
Add eggs, egg whites, flour, Gourmet Garden Dill and Chili Pepper, whisk until smooth. Stir in bacon, cheese and spinach. Pour into a pie plate or quiche pan coated with non stick cooking spray.
Step 4
Bake in a preheated 350?F oven for 45 minutes or until top is golden and a knife inserted in the center comes out clean. Let stand 5 minutes before serving.
