Asian Pear & Snow Pea Salad with Cilantro & Ginger

Ingredients
  • 2 Asian pears unpeeled 
  • 1 cup Snow Peas, blanched
  • 1/2 head iceberg lettuce 
  • 5oz. baby arugula leaves 
  • 1 small red onion sliced into rings
  • 2 Tbsp rice or white wine vinegar
  • 1 Tbsp light soy sauce 
  • 1 tsp Gourmet Garden Ginger 
  • 2 tsp Gourmet Garden Cilantro
  • 2 tsp honey
Method SERVES 4
Step 1
For dressing, place all ingredients in a jar with a screw top lid. Add a pinch of black pepper. Cover and shake to combine.

Step 2
Blanch snow peas in boiling water until they turn bright green, but are still crisp. Refresh in cold water and drain.

Step 3
Slice pear, core and cut into sticks.

Step 4
Combine lettuce, arugula, onion, snow peas and pears in a bowl. Shake dressing and pour over salad. Enjoy!
