Asian Ginger, Cucumber & Cabbage Salad

A light and delicious Asian inspired salad.

Ingredients

  • 8oz firm tofu, drained and cubed

  • 1/2 Chinese cabbage, finely shredded

  • 2 English cucumber, sliced (see tip)

  • 4oz bean sprouts
    Add to Shopping List
  • 6 green onions, thinly sliced

  • 1/4 cup cilantro leaves, to garnish

  • 1 Tbsp Gourmet Garden Ginger
    Add to Shopping List
  • 1/4 cup light oil
    Add to Shopping List
  • 2 Tbsp light soy sauce
    Add to Shopping List
  • 2 Tbsp rice vinegar or lemon juice
    Add to Shopping List
  • 2 tsp sesame oil
    Add to Shopping List
  • 1 Tbsp toasted sesame seeds

Method SERVES 4

Step 1
In a small bowl, combine Gourmet Garden Ginger with remaining dressing ingredients.

Step 2
Place all ingredients in a serving bowl and toss thoroughly to combine with dressing. Sprinkle with cilantro leaves and serve. Note: Replace tofu with cooked prawns or chicken if desired. Use vegetable peeler to slice cucumber into ribbons.
