A light and delicious Asian inspired salad.
Ingredients
- 8oz firm tofu, drained and cubed
- 1/2 Chinese cabbage, finely shredded
- 2 English cucumber, sliced (see tip)
- 4oz bean sprouts
- 6 green onions, thinly sliced
- 1/4 cup cilantro leaves, to garnish
- 1 Tbsp Gourmet Garden Ginger
- 1/4 cup light oil
- 2 Tbsp light soy sauce
- 2 Tbsp rice vinegar or lemon juice
- 2 tsp sesame oil
- 1 Tbsp toasted sesame seeds
Method
SERVES 4
- Step 1
- In a small bowl, combine Gourmet Garden Ginger with remaining dressing ingredients.
- Step 2
- Place all ingredients in a serving bowl and toss thoroughly to combine with dressing. Sprinkle with cilantro leaves and serve. Note: Replace tofu with cooked prawns or chicken if desired. Use vegetable peeler to slice cucumber into ribbons.
