A simple and delicious salsa incorporating beans, onion, bell peppers and herbs.
Ingredients
- 15oz can white beans, drained and rinsed
- 1 red bell pepper, seeded, chopped
- 2 tbsp. shallot, finely diced
- 1 Tbsp. virgin olive oil
- 2 Tbsp. lemon juice
- 2 Tbsp. Gourmet Garden Parsley
- 1 tsp. Gourmet Garden Basil
- 1 tsp. Gourmet Garden Garlic
Method
SERVES 2
- Step 1
- Place beans, bell pepper, and shallots into a bowl.
- Step 2
- Whisk together lemon juice, olive oil, Gourmet Garden Parsley, Gourmet Garden Basil, and Gourmet Garden Garlic. Toss with bean mixture.
- Step 3
- Serve as appetizer with whole grain pita chips and sliced cucumber.
