Risotto doesn't have to be time consuming with this quick and tasty dish.
Ingredients
- 2 tbsp. olive oil
- 1lb chicken, cubed
- 1 onion, diced
- 2 cups risotto rice
- 4 cups chicken stock
- 1 cup mushrooms
- 1 cup cherry tomatoes, halved
- 1 zucchini, sliced
- 1 tbsp. Gourmet Garden Parsley
Method
SERVES 4
- Step 1
- Heat olive oil in a large pan. Sauté cubed chicken & diced onion for 4-5 minutes.
- Step 2
- Stir in risotto rice. Add chicken stock stirring til creamy and tender.
- Step 3
- Sauté mushrooms, cherry tomatoes & zucchini in a little olive oil.
- Step 4
- Stir into risotto with Gourmet Garden Parsley. Serve with shredded parmesan. Enjoy!
