Enjoy the taste of Mexico with this quick and easy dish
- 1 onion, finely chopped
- 1 red pepper, chopped
- 3 Tbsp Gourmet Garden Fresh BlendsTM Mexican
- 1lb ground beef
- ½ cup water or beef stock
- 15oz can diced tomatoes, undrained
- 2 Tbsp tomato paste
- 14oz can red kidney beans, drained
- 2 Tbsp Gourmet Garden Cilantro
- Sour cream and avocado to serve
Step 1
Cook onion in a lightly oiled large saucepan until soft. Add red pepper and Gourmet Garden Fresh Blends™ Mexican. Mix well.
Step 2
Add ground beef, cook, stirring to break up ground beef until meat is well browned.
Step 3
Add water or beef stock, diced tomatoes and tomato paste. Bring to a boil, reduce heat, simmer about 20 minutes or until sauce has thickened.
Step 4
Stir in red kidney beans and Gourmet Garden Cilantro, cook until heated through. Serve with sour cream and slices of avocado if desired.
