Great for the holidays.
- 1 Tbsp vegetable oil
- 1 yellow onion, large & sliced
- 1 cup celery, chopped
- 1 red pepper, chopped
- 2 Tbsp Gourmet Garden Fresh Blends Poultry
- ½ package (8 oz) cooked crumbled chorizo
- 1 cup chicken broth
- 2 cup cubed cornbread or cornbread stuffing cubes
Step 1
Heat vegetable oil in large skillet. Cook onion over medium heat for 15-20 min. or until browned and softened.
Step 2
Add celery and red pepper and cook 5-8 min. to soften. Stir in Gourmet Garden Fresh Blends Poultry and chorizo. Remove from heat.
Step 3
Heat chicken broth. Combine mixture with cornbread or cornbread stuffing cubes and add the heated broth then stir well.
Step 4
Place in an 8-in square greased baking dish or a 1-1/2 qt. casserole dish. Cover with foil and bake at 425 degrees for 20-25 min.
Tip: If you prefer crunchier stuffing; do not cover before baking. Try andouille sausage for a spicier version.
