Ingredients
- 8 oz skinless, boneless chicken breast, diced
- 2 ½ (16 oz) cans reduced sodium chicken broth
- 4 Tbsp rice wine vinegar
- 2 Tbsp balsamic vinegar
- 2 tsp Gourmet Garden Chili Pepper
- 1 Tbsp soy sauce
- 1 Tbsp dry sherry
- 1 tsp Gourmet Garden Garlic
- 2 tsp Gourmet Garden Ginger
- 1 carrot, peeled and julienned
- 6 shitake mushrooms
- 2 Tbsp cornstarch mixed in 2 tbsp. cold water
- 3 green onions, sliced thinly
Method
SERVES 4
Step 1
Heat the broth in a large pan, add the chicken and simmer for 10 minutes.
Step 2
Add all of the remaining ingredients and bring to a boil.
Step 3
Reduce temperature and simmer while stirring until the soup thickens slightly (3-5 minutes)
