A quick and easy salad combining noodles, salmon and fresh Asian vegetables.
Ingredients
- 8oz rice stick noodles
- 1lb zucchini, sliced thinly
- 6 green onions, sliced thinly
- 8oz sashimi grade salmon, sliced thinly
- 2 tsp black sesame seeds
- 2 tsp Gourmet Garden Ginger
- 2 tsp Gourmet Garden Lemongrass
- 1 tsp sesame oil
- 3 Tbsp soy sauce
- 2 Tbsp sake
- 2 Tbsp lemon juice
- 1 tsp sugar
- Pinch cayenne pepper
Method
SERVES 6
- Step 1
- Cook the noodles according to the instructions on the package. Drain. Refresh in cold water.
- Step 2
- Boil, steam or microwave the zucchini until just tender. Refresh in cold water.
- Step 3
- Combine dressing ingredients in a large bowl.
- Step 4
- Add noodles, zucchini, onions and salmon to dressing and toss gently to combine. Sprinkle with sesame seeds and serve immediately.
