Minestrone Soup with Basil, Garlic & Oregano
Minestrone Soup

A mouth-watering soup combining oregano, basil, garlic and fresh garden vegetables. Perfect for a cold winter night.

Ingredients

  • 1 Tbsp olive oil

  • 1 onion, chopped

  • 2 tsp Gourmet Garden Garlic
    Add to Shopping List
  • 2 Tbsp tomato paste
    Add to Shopping List
  • 3 cups tomato pasta sauce (passata)

  • 2 cups reduced salt vegetable stock
    Add to Shopping List
  • 2 cups water
    Add to Shopping List
  • 1 zucchini, diced
    Add to Shopping List
  • 1 celery stalk, diced
    Add to Shopping List
  • 1 carrot, diced
    Add to Shopping List
  • 5 oz yellow squash, diced

  • 14.5 oz can borlotti beans
    Add to Shopping List
  • ½ cup macaroni pasta
    Add to Shopping List
  • 1 Tbsp Gourmet Garden Oregano
    Add to Shopping List
  • 1 Tbsp Gourmet Garden Basil
    Add to Shopping List
  • Crusty bread to serve

Method SERVES 4

Step 1
Heat olive oil in a large saucepan. Add onion and Gourmet Garden Garlic. Cook for 5 minutes or until tender. Add tomato paste. Cook for 1 minute.

Step 2
Add tomato pasta sauce, vegetable stock and water. Bring to the boil.

Step 3
Add zucchini, celery, carrot, yellow squash and borlotti beans. Simmer for 15 minutes.

Step 4
Add macaroni pasta. Simmer until pasta is tender. Season with salt and pepper. Add Gourmet Garden Oregano and Gourmet Garden Basil. Stir to combine. Serve minestrone with crusty bread.
