Step 1
Chop chicken breast fillets into approx 1½inch cubes. Place in a bowl. Add Gourmet Garden Fresh Blends™ Moroccan, olive oil, lemon rind and 1 tbsp lemon juice. Toss to coat. Thread chicken onto pre-soaked bamboo skewers.
Step 2
Combine couscous with boiling water in large heatproof bowl, cover; stand about 5 minutes or until water is absorbed. Fluff couscous with a fork.
Step 3
Add to the couscous 2 tbsp lemon juice, cherry tomatoes, spring onion, watercress and toasted pine nuts. Stir to combine.
Step 4
Heat a large non-stick frying pan over medium-high heat. Add skewers. Cook for 3 – 4 minutes each side or until cooked through. Or on the Grill over a medium heat. Serve with couscous.
