Mouth-watering mussels infused with lemon grass
- 4lb mussels
- 6 Tbsp water
- 2 Tbsp Gourmet Garden Lemon Grass
- 1 Tbsp Gourmet Garden Garlic
- Zest from 1 Lemon
- 1 tsp Gourmet Garden Ginger
- 1 cup coconut milk
- 1 Tbsp Gourmet Garden Cilantro
- 1/4 teaspoon black pepper
Step 1
Clean the mussels and discard any that are broken or do not close when tapped.
Step 2
Put them in a large pot with the water, Gourmet Garden Lemon Grass, Garlic, Ginger, lime zest and pepper. Cover and cook until the mussels open (shake the pan occasionally).
Step 3
Lift out the mussels and place on a warm serving dish. Boil the remaining liquid until reduced by 1/2.
Step 4
Pour in the coconut milk and add Gourmet Garden Cilantro. Bring to a boil to thicken slightly and pour over the mussels.
