A mouthwatering roast using Fresh Blends Poultry.
- 1 onion, chopped
- 4 rindless shortcut bacon rashers, chopped
- 3 oz baby spinach
- 1 ½ tbsp pine nuts
- 1 Tbsp Gourmet Garden Fresh Blends Poultry
- 1 cup fresh breadcrumbs
- 1 egg
- 1 whole chicken
- 2 Tbsp olive oil
- 2 Tbsp Gourmet Garden Fresh Blends Poultry
Step 1
Cook onion and bacon in a large frying pan over high heat until onion is soft. Add baby spinach and pine nuts. Cook until wilted. Transfer to a bowl. Add 1 Tbsp Gourmet Garden Fresh Blends Poultry, breadcrumbs and egg. Stir to combine. Set aside to cool.
Step 2
Preheat oven to 350 degrees. Rinse chicken (including cavity) with cold water. Pat dry with paper towel. Fill cavity with stuffing mixture. Tie legs with kitchen string.
Step 3
Combine olive oil and 2 Tbsp Gourmet Garden Fresh Blends Poultry. Brush chicken with oil mixture. Place chicken, breast-side up, on a wire rack in a roasting pan.
Step 4
Roast for 1 hour 30 minutes or until juices run clear when chicken thigh is pierced with a skewer (cover with foil if over-browning). Stand for 10 minutes. Serve.
