A delicious stuffing perfect for turkey.
- ¼ cup olive oil
- 3 tbsp Gourmet Garden Fresh Blends Poultry
- 8 oz button mushrooms, quartered
- 1 zucchini, small, cubed
- 1 red onion, chopped
- 2 parsnips, peeled and chopped
- 1 cup vegetable broth
- ½ tbsp Gourmet Garden Fresh Blends Poultry
- 2 ½ cup unseasoned stuffing cubes
Step 1
Preheat oven to 425 degrees. Combine olive oil and 3 tbsp. Gourmet Garden Fresh Blends Poultry in a small bowl.
Step 2
Toss mushrooms, zucchini, red onion and parsnips with poultry blend mixture, place vegetables flat on a foil lined jellyroll/cookie sheet. Bake for 30 minutes or until softened and caramelized.
Step 3
Heat vegetable broth then, stir in ½ Tbsp. Gourmet Garden Fresh Blends Poultry. Combine roasted vegetables with stuffing cubes and add the heated broth; stir well.
Step 4
Place stuffing in an 8-in square greased baking dish or a 1-1/2 qt. casserole dish. Cover with foil and bake in 425 degree oven for 20-25 min.
Tip: If you prefer crunchier stuffing; do not cover before baking. Vegetables can be roasted 1 day in advance and stored in the refrigerator.
