Grilled salmon fillet with a light vinegarette and served on a bed of fresh vegetables
Ingredients
- 1oz butter
- 2 bunches spinach
- 4 salmon fillets
- 1/4 cup olive oil
- 2 tbsp. white wine vinegar
- 2 tbsp. Gourmet Garden Basil
Method
SERVES 4
- Step 1
- Melt butter in a frying pan on high. Toss in spinach for 2-3 minutes until wilted.
- Step 2
- Heat pan to medium and cook salmon fillets for 2-3 minutes each side until cooked to taste.
- Step 3
- Meanwhile, whisk olive oil, vinegar and Gourmet Garden Basil. Season to taste.
- Step 4
- Serve salmon on a bed of spinach, drizzled with basil vinaigrette. Enjoy.
