Salmon with Basil Vinagarette

Grilled salmon fillet with a light vinegarette and served on a bed of fresh vegetables

Ingredients

  • 1oz butter

  • 2 bunches spinach
    Add to Shopping List
  • 4 salmon fillets
    Add to Shopping List
  • 1/4 cup olive oil
    Add to Shopping List
  • 2 tbsp. white wine vinegar
    Add to Shopping List
  • 2 tbsp. Gourmet Garden Basil
    Add to Shopping List
Method SERVES 4

Step 1
Melt butter in a frying pan on high. Toss in spinach for 2-3 minutes until wilted.

Step 2
Heat pan to medium and cook salmon fillets for 2-3 minutes each side until cooked to taste.

Step 3
Meanwhile, whisk olive oil, vinegar and Gourmet Garden Basil. Season to taste.

Step 4
Serve salmon on a bed of spinach, drizzled with basil vinaigrette. Enjoy.
