A cool, fresh salad incorporating delicious shrimps.
Ingredients
- 1-1/2 lbs uncooked shrimp, peeled & deveined
- 2 Tbsp Gourmet Garden Garlic
- 4 Tbsp olive oil
- Juice of 1 lemon
- Freshly ground pepper
- 1/2 tsp dry mustard
- 1 pinch brown sugar
- 1 Tbsp vinegar
- 2 Tbsp olive oil
- 2 Tbsp Gourmet Garden Parsley
- 1 carrot, cut lengthwise
- Lettuce & arugula to serve
Method
SERVES 4
- Step 1
Mix the lemon juice, 4 tbsp. olive oil and Gourmet Garden Garlic. Pour over the shrimp; marinate for 30 minutes.
Step 2
Cook shrimp in marinade in a frying pan for about 4-5 minutes. Stir in the Gourmet Garden Parsley.
Step 3
Mix the mustard, brown sugar, pepper and vinegar and whisk in 2 tbsp. olive oil. Toss the lettuce, rocket and carrot with the dressing.
Step 4
Serve the salad on plates top with the shrimp. Enjoy.
