An easy soup packed with flavor and color
Ingredients
- 3 cups fish stock
- 1 Tbsp Gourmet Garden Lemongrass
- 1 Tbsp fish sauce
- 4 torn kaffir lime leaves
- 2 tsp Gourmet Garden Garlic
- 1kg medium green shrimp
- 200g udon noodles
- 230g can drained sliced bamboo shoots
- 150g fresh mushrooms
- 150g baby spinach
- 1 Tbsp Gourmet Garden Cilantro
- 3 finely sliced green beans
Method
SERVES 4
- Step 1
- Combine 1 ½ cups water and fish stock in a large saucepan. Add Gourmet Garden Lemongrass, fish sauce, kaffir lime leaves and Gourmet Garden Garlic.
- Step 2
- Bring to a boil, reduce heat and simmer for 5 minutes. Remove lime leaves. Meanwhile; shell shrimp.
- Step 3
- Add shrimp to pan with udon noodles, drained sliced bamboo shoots and mushrooms. Simmer 5 minutes or until prawns change color.
- Step 4
- Stir in baby spinach and Gourmet Garden Cilantro, remove from heat. Ladle into serving bowls and top with green onions.
