Spinach and Feta Cheese Tart with Basil & Garlic

A simple tart or quiche that can be prepared in minutes.

Ingredients

  • 1 sheet of prepared puff pastry

  • 2 tsp olive oil

  • 1 medium brown onion, sliced thinly
    Add to Shopping List
  • 2 tsp Gourmet Garden Garlic
    Add to Shopping List
  • 500g spinach, trimmed (or 200g baby spinach)

  • 100g sheep's cheese (Feta)
    Add to Shopping List
  • 2 eggs
    Add to Shopping List
  • 100g yogurt
    Add to Shopping List
  • 1 Tbsp Gourmet Garden Basil
    Add to Shopping List
Method SERVES 4

Step 1
Grease a 23cm pie plate and line with puff pastry to form a pastry base. Prick pastry all over. Bake pastry for 10mins at 180°C. Press pastry lightly to flatten.

Step 2
In a large fry pan heat olive oil. Cook onion and Gourmet Garden Garlic until onion is soft. Cook roughly chopped spinach until spinach collapses.

Step 3
Remove dish from oven. Spread crumbled cheese over base, top with spinach mixture. Whisk together eggs, plain yoghurt and Gourmet Garden Basil, pour over spinach mixture and bake for 25mins at 180°C.

Step 4
Serve warm or cold with salad. Enjoy.
