Spinach and Tomato Salad with Basil Vinaigrette

A scrumptious, light salad perfect for a summer night.

Ingredients

  • 1 Tbsp pine nuts

  • 1 Tbsp shaved parmesan cheese, plus more to serve

  • 2 1/2 Tbsp olive oil

  • 1 Tbsp balsamic vinegar 
    Add to Shopping List
  • 1 Tbsp Gourmet Garden Basil

  • 6 oz baby spinach leaves

  • 8 oz cherry tomatoes

Method SERVES 4

Step 1
Finely grind pine nuts and 1 tbsp. of fresh parmesan cheese. Whisk mixture together with olive oil, balsamic vinegar and Gourmet Garden Basil to make a vinaigrette.

Step 2
Wash and dry spinach. Halve cherry tomatoes.

Step 3
Toss the spinach with the vinaigrette, then add tomatoes and mix in carefully.

Step 4
Serve salad in bowls, season well with cracked pepper and sprinkle with fresh parmesan cheese. Enjoy.
